Rico's Red Beans and Rice

Rico’s Red Beans and Rice

OK – here’s a stab at the recipe. I usually use a big crock pot, or the
big green pot :)

5-6 cans of red beans 15-16oz? (or a few of the big ones)
1-2 cans 15oz of diced tomatoes (can get them with garlic and onion)
1 medium vidalia (or other sweet yellow) onion, chopped up
1 green pepper
1 red pepper (chop both up good)
a few cloves of garlic, crushed
Salt & pepper
Thyme (wish I could give a measure, but I usually do it to taste)
couple of Bay leaves
I usually throw in some Tony Chacharies (sp?) spices as well.

Put all the onion, pepper, and garlic in a pan with a little oil, cook
it till the onion starts to turn clear.

Toss that in a pot with the beans. A crock-pot will have to cook a
couple hours longer than just on the stove in a big pot. Basically cook
it till the beans start to soften up.

A couple pounds of good sausage. There is a brand name (that I can’t
recall at the moment) that Winn-Dixie carries here that is cajun spiced.
If you can find Andoullie (sp?) sausage, it’s good stuff. Otherwise, I
just get regular smoked sausuage. I usually cut medallions and pan fry
them till they’re browned on both sides. Drop them in the beans when the
beans are getting soft, cook another 30 min.

If you start with dried beans, you’ll have to follow the directions.
Wash, soak overnight, etc. Canned beans are much easier.

Cook up enough rice for however many people you want to serve. For 6
cans of beans, I think I usually do about 6 cups of rice.

You want to keep the beans somewhat bland, then have Lousiana hot sauce,
Tony Chacharies, etc for people to spice it up to their tastes.

Some time ago when they first came out I bought an iPod shuffle (1G) it’s the large form factor version before they redesigned them smaller.  Sadly it went through the wash.  I had thought the battery was hosed since it still worked as a USB key.  Well as it turns out I was cleaning my office this weekend and found it in a drawer.  I reinstalled the firmware on it and low and behold it works now.  Go Apple!  Apparently it needed longer to dry out than I thought.

Book LaLa

I’ve discussed lala.com before and anyone that’s engaged me in discussion about it knows I’ve fairly passionate about it.  Today I happened to find Bookmooch which appears to be the same thing except for books.  I’m probably more into keeping all my old books to reread and pass on to my kids, but the concept again is sound and would be a great way to introduce people to additional books, authors etc.

Now if only I can find the equivalent for video games I’ll be set.

Good old Internet hate…

While playing with Connor and God of War II fill the void until hockey season starts back again.  I was reminded today about divealanche.com.  A whole site dedicated to the hate and ridicule of the Colorado Avalanche.  Personally I inherited my hate for Roy from Scott and me being a closet Brodeur fan doesn’t help.   But the site is still funny… especially this part.

LaLa to get into the digital music arena

This is an interesting development.  LaLa.com (an excellent CD trading site) will start offering digital tracks for $0.99.  The twist is that they will push them directly to your iPod.

To download songs to an iPod, members must download a 3-megabyte plug-in that runs on all major browsers on Windows and Macintosh computers. Because the songs aren’t stored on the PC hard drive, the primary source for files pirated on peer-to-peer networks, Lala will dispense with traditional digital rights management, which controls which devices can play a song.

It’s an interesting theory that the record labels will buy that this keeps their IP safe.  Granted Apple in particular does go to some lengths to obscure the tracks on the harddrive (has everyone forgotten that’s all an iPod is).  But that being said it’s still not very difficult to get the tracks off of your player.  Other players don’t do any obfuscation at all making it easier.  Maybe in a couple of hundred years they’ll figure out that people are going to share music regardless and they need to find a way to make it easier to get it through correct channels than to get it from somewhere else.

Some guys opinion on beer

Beer is one of those things that’s subjective. I’m not talking about mass produced american beer (aka canoe beer), but US craft beers which honestly put European brews to shame (solely based on originality). Personally I love wheat beers and generally don’t like IPAs. Does this mean they are bad, no, of course not. I just don’t prefer their taste, but they are still fine beers. Of this list I’ve only had one, but I’m going to try to find more of them for comparison.
